Larks in Aspic

Ingredients

Directions

  1. Bone the required number of larks.

  2. Fill each lark with liver forcemeat.

  3. Wrap each lark tightly in a small piece of muslin.

  4. Braise the larks in a rich stock and set aside to cool.

  5. Line small oblong moulds with aspic jelly for each lark.

  6. Decorate the bottoms and sides of the moulds with truffles and hard-boiled egg whites, then allow the jelly to set.

  7. Unwrap the larks and place one in each mould.

  8. Fill the moulds with aspic and place in the refrigerator to set.

  9. Unmould the larks, dish them up, garnish with parsley, and serve.
