Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides richness and body, whipping into a light, creamy texture.
Isinglass
Acts as a gelatin-like setting agent that firms the mixture as it cools.
Egg white
Whisked in, it traps air to lighten the sponge's texture.
Lemon juice
Adds acidity and bright lemon flavor that balances the sweetness.

The step that matters

Keep the cream from boiling. Heating cream to a boil can cause it to scorch or separate, and too much heat can weaken the isinglass's setting power, so keep it warm but below boiling.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar, milk, egg):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
