Ingredients

Directions

Prepare the lemon base

  1. Grate the yellow rind of the lemons into a bowl with the sugar.

  2. Pour the strained juice of the lemons over the sugar.

  3. In an enamelled saucepan, combine the lemon mixture, isinglass, water, and sherry.

Make and clarify the jelly

  1. Heat gently, stirring until the isinglass dissolves.

  2. Strain the mixture through a bag.

  3. If not transparent, mix in the whisked egg whites and crushed shells with cold water.

  4. Boil the jelly for 3 minutes without stirring.

  5. Let it settle for 5-6 minutes.

  6. Strain again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Dissolves to set the liquid into a firm, tender jelly.
Sugar
Sweetens the jelly and balances the sharpness of the lemon juice.
Lemon juice
Provides the main acidity and lemon flavour of the jelly.
Egg whites
Coagulate and collect impurities, helping clarify the jelly to transparency.
Sherry
Adds aroma and a warm, mellow flavour to the lemon base.

The step that matters

Boil the jelly for 3 minutes without stirring. Stirring during the boil can break up the egg-white clarifying mass and cloud the jelly. Holding a steady boil also helps the egg whites coagulate and trap impurities, so the jelly sets clear.
