Why it works: Lemon and sherry are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 3,273 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓
Lemon Jelly, Isinglass, Superlative
Ingredients
Directions
Prepare the syrup and juice
Rub the lemons with a soft cloth and thinly pare the rind from 3 of them.
Boil the sugar in water for 6 minutes to make a syrup, then cool it.
Strain the juice from all the lemons through muslin and mix it with the syrup.
Clarify and set
In an enamelled saucepan, combine isinglass and spring water beaten with egg white.
Gently stir until scum forms, then boil softly and skim carefully for 5 minutes.
Strain the mixture and combine it with the clarified syrup.
Add sherry if desired and strain the jelly through muslin until clear.
Pour into damp moulds and chill until set.
Serve
Before serving, dip the mould in hot water and turn it out onto a dish.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like protein that sets the juice into a firm, wobbly jelly when chilled.
- Lemons
- Supply the acidity and bright flavour that balance the sugar in the jelly.
- Refined sugar
- Sweetens the jelly and adds body to the syrup.
- Egg white
- Binds to impurities as it heats, helping to clear the jelly.
The step that matters
Skimming and straining the clarifying mixture. Boiling the isinglass and egg white forms scum that traps cloudy particles. Skimming it carefully and straining through muslin removes these, so the jelly comes out clear rather than murky.

Fit is the average pairing score against sugar, egg, sherry. Candidates are from the same food group and used in at least 100 recipes.
