Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the gravy

  1. Remove the meat from the lobsters and cut it into small pieces.

  2. Bruise the shells and spawn in a mortar.

  3. Combine the shells, spawn, water, vinegar, salt, pepper, and mace in a stewpan.

  4. Simmer gently to extract the flavor, then strain the gravy.

  5. Thicken the gravy with butter rolled in flour and bring it to a boil.

Assemble and bake

  1. Line a pie dish with puff pastry, add the lobster pieces, and pour the gravy over them.

  2. Sprinkle finely-grated bread crumbs on top, cover with pastry, and bake at 350°F (175°C) for about 1 hour and 15 minutes.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobsters
Provide the main meat, which sets the dish's flavor and texture when baked in the pie.
Butter
Enriches the gravy and adds richness and a smooth mouthfeel when cooked with flour.
Flour
Thickens the gravy so it holds together rather than running out of the pie.
Puff pastry
Forms the flaky crust that encloses the filling and browns in the oven.
Vinegar
Adds acidity that sharpens the flavor of the shell-based gravy.

The step that matters

Thicken the gravy with butter rolled in flour. Flour must be cooked into the butter and liquid enough to thicken smoothly; adding it lumpy or without bringing the gravy to a boil leaves it thin or floury-tasting.

Swap the mace

How well each one fits the dish's main ingredients (lobster, vinegar, pepper, butter, flour, bread):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against lobster, vinegar, pepper, butter, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
