Mincemeat Royal

Oven, in the book's wordsA moderately quick oven

Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the clarified butter, egg yolks, pounded sugar, grated lemon rind, and lemon juice, then mix in the mincemeat until well combined.

  3. Fill patty pans nearly to the top with the mixture.

  4. Bake in the preheated oven until set.

Make the meringue and finish

  1. In another bowl, beat the egg whites until stiff peaks form.

  2. Gradually add the pounded loaf sugar to the egg whites, continuing to beat until glossy.

  3. Spread the meringue over the baked mincemeat mixture.

  4. Return to the oven and bake until the meringue is a nice rich brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the filling and help it set firm when baked.
Egg whites
Whipped into a stiff foam that forms the meringue topping.
Mincemeat
Provides the fruity, spiced flavour and moisture of the filling.
Clarified butter
Adds richness and fat for a tender, flavourful filling.
Pounded loaf sugar
Stabilises the whipped egg whites and sweetens the meringue for browning.
Lemon juice
Adds acidity that brightens the sweet, rich filling.

The step that matters

Beating the meringue to stiff peaks. Egg whites must be whipped until stiff and glossy, with sugar added gradually, so the foam holds its shape and bakes into a stable topping. Under-whipped or greasy whites will weep or collapse in the oven.
