Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Grease a pie dish with butter.

  3. Layer mushrooms at the bottom of the dish.

  4. Sprinkle with pepper, coarse sea salt, and a few pieces of butter.

  5. Add a layer of sliced boiled potatoes.

  6. Continue layering mushrooms and potatoes until the dish is heaped.

  7. Cover with short crust pastry and decorate as desired.

  8. Bake for 45 minutes.
