Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox tongue
Forms the main meat, which is firm and becomes tender after long gentle boiling.
Dripping or butter
Adds fat and moisture during roasting and helps the surface brown.
Brown gravy
Adds moisture and savoury flavour to the sliced meat when served.
Red currant jelly
Adds sweetness and acidity that balances the rich, savoury meat.

The step that matters

Boil it gently for about 3 hours. A gentle simmer, not a rolling boil, keeps the tongue from toughening and breaking apart while the tough connective tissue softens into tender meat.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (butter, red currant):

  2. Cinnamonbetter flavor fit
  3. Parsleybetter flavor fit
  4. Clovethe original

Fit is the average pairing score against butter, red currant. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
