Why it works: Lemon and angelica match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 189 recipes. Both carry (e,e)-2,4-decadienal, which smells fatty, deep fried. The science ↓

What each ingredient does

Gelatin
Sets the liquid peach mixture into a firm, sliceable dessert as it cools.
Heavy cream
Whipped into the mixture to add lightness, richness, and a creamy texture.
Peaches
Provide the main fruit flavor and the body of the puree.
Caster sugar
Adds sweetness and balances the acidity of the lemon juice.
Lemon juice
Adds acidity that brightens the peach flavor and keeps it from tasting flat.

The step that matters

Stir until the mixture begins to set. Gelatin must be cooled to a syrupy, just-thickening state before the whipped cream is folded in. If it sets too far, it forms lumps and the mousse loses its smooth texture; if it is too warm, the cream deflates and the dessert will not hold its shape.

Swap the peach

How well each one fits the dish's main ingredients (gelatin, syrup, lemon, sugar, cream, angelica):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Peachthe original

Fit is the average pairing score against gelatin, syrup, lemon, sugar, cream, angelica. Candidates are from the same food group and used in at least 100 recipes.
