Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel, stone, and slice the peaches.

  2. Line a shallow pie dish with short crust pastry.

  3. Fill the dish with the sliced peaches and sprinkle with sugar.

  4. Crack one or two peach stones and place the kernels among the peaches.

  5. Cut some pastry into strips and place them crosswise over the peaches.

  6. Bake for 40 minutes in a 400°F (200°C) oven.

  7. Serve with cream.
