Potato Biscuits

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the flour

  1. Bake the potatoes until done.

  2. Burst them open and scoop out the insides to measure ¼ pound of flour.

  3. Pass the flour through a fine sieve.

Make the batter

  1. Mix the sieved flour with the beaten yolks of 8 eggs, grated lemon peel, and powdered sugar. Beat the mixture until light.

  2. Fold in the beaten egg whites.

Bake

  1. Oil small paper cases.

  2. Fill the paper cases halfway with the batter. Sprinkle a little coarse sugar on top.

  3. Bake in a moderate oven at 350°F (175°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the flour-like starch that gives the biscuits their body and soft crumb.
Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise in the oven.
Powdered sugar
Sweetens the batter and dissolves smoothly into the mixture for a fine, even crumb.
Lemon peel
Adds aromatic oil that gives a bright, fresh flavour to the biscuits.

The step that matters

Fold in the beaten egg whites. Folding gently keeps the air beaten into the whites, which is what lightens the batter and helps the biscuits rise. Stirring hard would knock that air out and leave them dense.

Swap the potato

How well each one fits the dish's main ingredients (flour, egg, lemon, sugar):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against flour, egg, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
