Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the boulettes and give them a soft, tender interior.
Egg whites
Whisked to stiff peaks, they lighten the mixture and help it puff while frying.
Egg yolks
Add richness and bind the potato mixture together.
Butter
Adds fat, richness and a smoother texture to the potato mixture.

The step that matters

Folding in the egg whites. Stiff egg whites trap air, which lightens the mixture and helps the boulettes puff. Folding gently keeps that air in; stirring vigorously deflates the whites and leaves dense boulettes.
