Potatoes, Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Wash the potatoes in lukewarm water and scrub the skins with a soft brush.

  3. Place the potatoes in the oven and bake for about two hours until done.

  4. Do not leave them in the oven after they are cooked to avoid hardening.

  5. Serve the potatoes neatly folded in a hot napkin with pats of butter.

  6. Optionally, cut a small slice from the top of each baked potato, mix the pulp with minced shallot, a pinch of pepper, salt, and butter, then replace the lid and serve hot.
