Potatoes, Stuffed

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Hollow out some large potatoes.

  3. In a bowl, mash mealy potatoes with chopped parsley, chives, shallot, butter, diced bacon, pepper, and salt.

  4. Butter the insides of the hollowed potatoes and fill them with the potato mixture.

  5. Place the stuffed potatoes on a buttered baking sheet and bake until browned.

  6. Serve hot.
