Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set with gentle heat, giving it a rich, smooth body.
Flour
Stabilises the sauce and helps it thicken without becoming grainy.
Butter
Adds fat for a smooth, silky mouthfeel and rich flavour.
Sugar
Sweetens the sauce and draws out the lemon's oils when rubbed into the peel.
Sherry or madeira
Adds fortified wine flavour and a mild acidity and depth.
Brandy
Adds aroma and warmth to the finished sauce.

The step that matters

Whisk over gentle heat without boiling. Egg yolks thicken as their proteins set, but high heat or boiling can curdle them into a grainy texture. Gentle, constant whisking keeps the sauce smooth.
