Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Raspberry Cream

Ingredients

Directions

Make the raspberry juice

  1. Bruise the raspberries and place them in a saucepan with powdered sugar.

  2. Boil quickly until the juice flows freely, then strain it off.

Make the cream

  1. Soak the gelatin for 1 hour, then dissolve it in the milk over low heat.

  2. Once cool, add the raspberry juice, brandy, and sugar if needed.

  3. Whip the cream and fold in the gelatin mixture.

  4. Pour into a mold soaked in cold water and refrigerate until set.

  5. Carefully turn out before serving or serve in glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid mixture into a firm, sliceable cream when chilled.
Cream
Adds richness and a light, airy texture when whipped and folded in.
Raspberries
Provide the main flavour and the juice that colours and sweetens the dish.
Milk
Forms the liquid base that the gelatin dissolves into, adding body and mild richness.

The step that matters

Dissolving the gelatin in the milk over low heat. Gelatin needs gentle heat to dissolve fully; boiling can weaken its setting power and leave grainy or uneven pieces. Adding the mixture to the cream only after it has cooled keeps it from setting in lumps.
