Ingredients
Directions
The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Roll out the pastry dough to ¼ inch thick.
Cut rounds of 4 to 6 inches in diameter.
Place a small amount of rhubarb on one half of each round.
Add sugar to taste and sprinkle with powdered ginger.
Fold the pastry over and pinch the edges to seal.
Brush the tops with egg white and sprinkle with powdered sugar.
Bake on a baking sheet in a 400°F (200°C) oven for about 20 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
