Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Releases starch into the water, giving the finished liquid a light body.
Sugar
Adds sweetness to balance the plain, starchy liquid.
Lemon peel
Adds aroma from its fragrant oils as the water simmers.

The step that matters

Boil gently for 45 minutes. A gentle simmer reduces the liquid evenly and slowly. A hard boil evaporates water faster, can scorch the rice and sugar on the bottom, and can make the flavour harsh.

Swap the lemon

How well each one fits the dish's main ingredients (rice, sugar):

  2. Coconutfits better

Fit is the average pairing score against rice, sugar. Candidates are from the same food group and used in at least 100 recipes.
