Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Beat the yolks of the eggs with the sugar until frothy.

  2. Add the pounded walnuts and grated lemon rind to the egg mixture.

  3. Beat the egg whites until stiff and fold them into the mixture.

Bake and cool

  1. Grease a cake tin with butter and sprinkle with manna.

  2. Pour the mixture into the prepared tin.

  3. Bake in a moderate oven at 350°F (175°C) for about 1 hour.

  4. Let the cake cool in the tin before removing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped by beating give the cake lift, while yolks add richness and set the crumb.
Walnuts
Provide the bulk of the cake, along with fat and a moist, dense texture.
Sugar
Sweetens the cake and helps the yolks whip to a light, frothy base.
Manna
Coats the greased tin so the cake releases cleanly and its crumbs add a light dry structure.

The step that matters

Folding in the egg whites. Stiff whites hold the air that lifts the batter. Folding gently keeps that air in; stirring hard deflates the mixture and leaves a dense cake.

Swap the walnut

How well each one fits the dish's main ingredients (egg, sugar, lemon, butter):

  1. Almondfits better
  2. Pistachiofits about as well
  3. Walnutthe original
  4. Milletfits about as well

Fit is the average pairing score against egg, sugar, lemon, butter. Candidates are from the same food group and used in at least 100 recipes.
