Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Cream together the butter and castor sugar.

  2. Add the beaten egg and stir in the milk, beating slightly.

  3. Mix the lemon juice and grated lemon rind into the mixture.

  4. Combine the cream of tartar and baking soda, then stir into the flour.

  5. Gradually sift in the flour until the paste is thick.

Shape and bake

  1. Knead and roll out the dough very thin.

  2. Cut into shapes with a pastry cutter or into ovals and circles.

  3. Bake in a 400°F (200°C) oven for 5 minutes.

What each ingredient does

Butter
Creaming with sugar traps air and gives the jumbles a tender, rich texture.
Castor sugar
Sweetens the dough and, creamed with butter, helps create a light structure.
Egg
Binds the dough and adds richness and structure as it sets in the oven.
Cream of tartar
Acidifies the dough and reacts with baking soda to help the jumbles rise and lighten.
Baking soda
Reacts with the acid in the dough to produce gas, helping it rise and spread lightly.
Flour
Provides the structure that holds the dough together and sets as it bakes.

The step that matters

Rolling the dough very thin. Thin dough bakes quickly and evenly, so the jumbles turn crisp and golden rather than thick and doughy. Dough rolled too thick may stay soft in the centre.
