What each ingredient does

Eggs
Set and bind to form the omelet's structure around the filling.
Cold cooked salmon
Provides the main flavour and protein for the filling.
Lemon juice
Adds acidity that brightens the rich salmon and butter.

The step that matters

Ensure the mixture is thick. A thin, wet filling releases liquid into the omelet as it is folded, making it soggy and likely to tear. Heating the salmon until thick lets it stay in place inside the omelet.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, salmon, lobster, butter, sauce, pepper, lemon):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Nutmegthe original
