Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Forms the main body of the fritter, giving a tender, mild vegetable filling.
Flour
Provides the structure that holds the batter together around the salsify.
Butter
Adds richness and fat, contributing flavor and a tender texture to the batter.
Egg white
Whisked into the batter to add lightness and help the coating puff and set when fried.

The step that matters

Fry the coated salsify in hot fat until lightly browned. If the fat is not hot enough, the batter absorbs oil and turns greasy instead of crisping. Hot fat sets the coating quickly, creating a crisp surface and keeping the fritter from soaking up excess oil.

Swap the parsley

How well each one fits the dish's main ingredients (flour, butter, egg):

  1. Capersfits better
  2. Nutmegfits better
  3. Jalapenofits about as well
  4. Parsleythe original

Fit is the average pairing score against flour, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
