Sprats, Baked

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the sprats

  1. Clean the sprats and remove the heads.

  2. Draw them at the gills.

  3. Dry with a soft cloth.

Bake

  1. Place the sprats in a dish and cover with equal parts vinegar and water.

  2. Add the bay leaf, onion, allspice, salt, and whole peppercorns to the liquid.

  3. Cover the dish tightly.

  4. Bake in a gentle oven at 300°F (150°C) until done, about 30 to 45 minutes.

Finish and seal

  1. Once cooled, remove the cover.

  2. Pour cold vinegar over the sprats.

  3. Seal them up.

What each ingredient does

Sprats
Are the main fish that is cooked and preserved in the dish.
Vinegar
Acidifies the liquid, helping preserve the fish and giving it a tangy flavor.
Bay leaf
Adds a subtle aromatic flavor to the cooking liquid.

The step that matters

Baking gently with the dish tightly covered. A gentle oven and a tight cover let the fish cook slowly in the vinegar and water without drying or breaking apart. Sealing traps steam so the bones soften through gradual heat, which matters for a dish meant to be eaten bones and all.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, allspice):

  1. Mustardfits better
  2. Cucumberfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, allspice. Candidates are from the same food group and used in at least 100 recipes.
