Stock, Second
Ingredients
Directions
Boil the stock gently for 5 to 6 hours.
Strain it through a fine sieve into an earthenware pan.
When cold, remove the fat from the top and pour the gravy off gently.
Keep the gravy uncovered over a brisk fire, skimming as necessary.
Boil quickly until it begins to thicken.
Reduce heat and boil gently until it resembles thin treacle.
When it sets into a stiff jelly on a spoon, strain into small, dry jars to a thickness of 1.5 inches.
Let it cool in a cool place until needed.
If not hard enough after a few days, place the jar in boiling water until it evaporates sufficiently.
