Sweetbreads, Patties of
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Cut cold dressed sweetbread into quarter-inch dice.
Prepare according to sweetbread croquettes directions.
Fill small patties or vol-au-vent cases with the mixture.
Heat in the oven at 400°F (200°C) for 1-2 minutes until hot.
Enclose the mixture in a circular piece of pastry the size of a crown piece.
Fry in hot lard until the pastry is cooked.
Drain the patties and serve on a hot napkin.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
