What each ingredient does

Tapioca
Starch that swells and thickens with heat, turning the liquid clear and gel-like as it cools.
Water
Hydrates the tapioca so it can swell and form a thick, tender jelly.
Sugar
Adds sweetness and balances the tart citrus flavour.
Lemon juice
Adds acidity that brightens the flavour and offsets the sweetness.

The step that matters

Simmer gently until clear and thick. Tapioca starch must be heated until its granules swell and burst fully, which makes the mixture clear and thick. Undercooked tapioca stays cloudy and grainy, and it may not set firmly when chilled. Keep the heat gentle so the starch does not scorch on the bottom of the pan.
