Truffles, Timbale of

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Line a round mold with puff pastry.

  2. Wash and brush the truffles, then cut them into thin slices.

  3. In a small frying pan, heat the butter and add the truffle slices, pepper, salt, and nutmeg.

  4. Cook over medium heat for 5 to 6 minutes, being careful not to break the truffles.

  5. Drain the truffles and place them in the mold.

Bake and serve

  1. Cover the mold and make a hole in the center for steam to escape.

  2. Bake in a hot oven at 400°F (200°C) until the pastry is done.

  3. Once baked, fill the hole with gravy, place a slice of truffle on top, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh truffles
Provide the main aroma and flavor of the dish.
Puff paste
Forms a flaky, crisp shell that holds the truffles while baking.
Fresh butter
Carries the truffle slices in the pan and adds richness.

The step that matters

Cooking the truffle slices. Truffle slices are delicate and break easily under heat and handling. Gentle medium heat keeps them intact and prevents their moisture and aroma from being lost too quickly.

Swap the nutmeg

How well each one fits the dish's main ingredients (truffle, butter, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Sagefits about as well
  4. Nutmegthe original

Fit is the average pairing score against truffle, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
