Directions

Prepare the truffle

  1. Clean and pare the truffle, then cut it into small pieces.

  2. Simmer the truffle pieces in 2 tablespoons of butter over low heat for 5-6 minutes.

  3. Drain the truffles and place them in a clean saucepan with 2 ounces of fresh butter, 6 eggs, 2 tablespoons of thick cream, pepper, salt, and nutmeg.

Make the eggs and serve

  1. Stir the mixture with a wooden spoon over low heat until it begins to thicken.

  2. Remove from heat and beat the mixture until the eggs set but are not hard.

  3. Serve the preparation on a hot dish and garnish with slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffle
Gives the dish its distinctive earthy aroma and flavour.
Eggs
Set on gentle heat to form the soft, creamy body of the dish.
Butter
Adds richness and fat, carrying the truffle aroma and keeping the eggs silky.
Thick cream
Adds moisture and richness, leading to a smoother, softer set.

The step that matters

Beating the eggs off the heat. Eggs set as their proteins coagulate with heat. Removing the pan and beating while the mixture is still warm lets it set gently into a soft texture. If it stays on the heat too long, the eggs turn hard and grainy.

Swap the nutmeg

How well each one fits the dish's main ingredients (truffle, butter, egg, cream, pepper):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against truffle, butter, egg, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
