Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Walnuts
Form the bulk of the jam and give it a soft, chewy texture.
Coarse brown sugar
Sweetens the dish and thickens the syrup as it cooks down.
Ginger
Adds warm, aromatic flavor that balances the sweetness.

The step that matters

Stirring while the walnuts boil in the syrup. Sugar syrup scorches quickly on the bottom of a pot as it thickens. Frequent stirring spreads the heat evenly, which prevents burnt flavor and keeps the syrup from turning bitter or dark.
