Yams, American

Ingredients

Directions

  1. Cut yams into slices ½ inch thick and shape into rounds the size of a tea cup.

  2. Wash, drain, and dry the yams thoroughly.

  3. Place yams in a well-buttered saucepan and season with a little coarse sea salt and grated nutmeg.

  4. Moisten with water, cover tightly, and simmer gently until cooked, about 45 minutes.

  5. Turn yams frequently for even coloring on both sides.

  6. Transfer to a dish and pour sweetened and flavored white sauce around them before serving.
