Yams, Baked

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the yams and cut a slice off one side.

  2. Replace the slice and bake the yams in a 350°F (175°C) oven.

  3. Once done, remove the slice and scrape the inside out with a fork.

  4. Add a little butter, pepper, and salt, then beat it up with a fork.

  5. Serve in a dish or put it back in the shell.
