What each ingredient does

Egg yolks
Thicken and enrich the base, giving it a creamy, custard-like body when whisked over warm water.
Sugar syrup
Sweetens the base and lowers its freezing point, keeping the frozen soufflé soft rather than rock hard.
Whipped cream
Adds air and fat, giving the frozen mixture a light, smooth texture.
Raspberry juice
Provides fruit flavour, sweetness and acidity to the base.
Chocolate drops
Melt-free flavour pieces that add richness and a contrast in texture as the dessert freezes.

The step that matters

Whisking the yolk base over hot water. Egg yolks thicken as they warm, but if they get too hot they scramble into lumps. Keep the heat gentle and whisk constantly so the base becomes smooth and thick before it is folded with cream and frozen.
