Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main savory flavor and body of the mixture.
Potatoes
Bind the mixture and give the balls a soft, starchy interior.
Egg
Binds the mashed mixture so the balls hold their shape.
Butter
Adds richness and flavor to the mixture and helps the frying browns the outside.
Cream or rich milk
Adds moisture and richness, keeping the mixture soft.

The step that matters

Drain all the water after boiling. Excess water makes the mashed mixture wet and loose, so the balls won't hold their shape and may steam rather than brown in the pan.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, cream, flour):

  1. Leekfits better
  2. Chivefits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
