Deviled Lobster

Ingredients

Directions

Prepare the lobster

  1. Remove the lobster meat from the boiled lobster and set aside, reserving the coral.

  2. Season the lobster meat with mustard, cayenne pepper, salt, and tabasco sauce, then mix well.

  3. Place the seasoned lobster in a covered saucepan with just enough hot water to prevent burning.

Make the sauce and cook

  1. Rub the coral smooth, adding vinegar until it is thin enough to pour easily, then stir it into the saucepan.

  2. Heat the mixture, allowing it to boil once before adding the coral.

  3. Stir in the butter, and when it boils again, remove from heat immediately to avoid toughening the meat.

What each ingredient does

Lobster meat
Provides the main protein, which becomes tender or tough depending on how gently it is heated.
Coral
Adds richness and colour to the sauce as it thickens into the mixture.
Butter
Adds fat and a smooth, rich mouthfeel to the finished mixture.
Vinegar
Thins the coral into a pourable liquid and adds a sharp acidity that balances the richness.
Mustard
Adds sharp, pungent flavour that cuts through the richness of the lobster and butter.

The step that matters

Removing the pan from the heat after the butter boils. Prolonged or vigorous boiling toughens lobster meat, because heat causes its proteins to tighten and squeeze out moisture. Removing the pan promptly keeps the meat tender.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, meat, pepper, sauce, vinegar, butter):

  1. Mustardthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Onionfits less well
