Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a deep baking dish.

Layer

  1. Spread half of the cracker crumbs on the bottom of the dish.

  2. Wet the crumbs with some oyster liquor.

  3. Add a layer of oysters, sprinkle with salt and pepper, and dot with small bits of butter.

  4. Repeat the layers of cracker crumbs, oyster liquor, oysters, salt, pepper, and butter until the dish is full.

  5. Finish with a top layer of cracker crumbs.

  6. Beat the egg with the milk and pour over the top.

Bake and serve

  1. Cover the dish and bake for 30 to 45 minutes.

  2. Uncover and brown the top on the upper rack for a few minutes.

What each ingredient does

Fine cracker crumbs
Form the bulk of the layers and soak up the liquid to set a moist, sliceable body.
Oyster liquor
Moistens the crumbs and adds briny, savoury flavour throughout the layers.
Oysters
Provide the main flavour and tender texture between the crumb layers.
Egg
Binds the milk custard so the top sets rather than staying loose.
Milk
Makes a custard with the egg that moistens and softens the crumb layers as it bakes.
Butter
Adds richness and fat that helps the top brown during baking.

The step that matters

Covering the dish while baking. Keeping the dish covered traps steam so the custard sets and the oysters cook gently, while the top stays moist; uncovering too early can dry the crumbs before the custard is set.
