Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Grease the tin plate with butter.

  3. Cover the bottom of the plate with puff pastry.

  4. Place 5-6 oysters on the pastry to cover the bottom.

  5. Butter the oysters and season with coarse sea salt and black pepper.

  6. Prepare an egg batter and spread it over the oysters.

Bake

  1. Cover with another layer of puff pastry, making small openings with a fork.

  2. Bake for 15-20 minutes, or until the top is nicely browned.

What each ingredient does

Puff pastry
Forms the flaky crust that bakes crisp and golden on the top and bottom.
Oysters
Provide the main filling, releasing moisture and a briny flavour as they cook.
Egg
Binds the egg batter and helps it set over the oysters while baking.
Butter
Adds richness and helps the pastry and oysters brown.

The step that matters

Making small openings with a fork in the top pastry. The vents let steam escape during baking so the pastry rises and cooks evenly rather than trapping moisture and becoming soggy underneath.
