Duck Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Remove all the meat from the cold roast ducks.
Place the bones and stuffing in a pot with cold water and bring to a boil.
Once boiled, strain the stock and pour enough over the duck meat in a deep dish to moisten it.
Cover the dish with pastry, making a small slit in the center.
Bake in a preheated oven at 400°F (200°C) until the pastry is light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
