Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flank or round steak
Provides the main body of the dish, and its minced fibres bind into cakes once formed.
Onion
Adds moisture and savory aroma to the minced meat as it cooks.
Butter and lard
Fat for frying that browns the cakes and forms the base of the gravy.

The step that matters

Frying the steak cakes until browned. The pan must be very hot before the cakes go in. Hot fat sears the surface quickly, creating browning flavour and a crust, while a cool pan lets the cakes steam and turn grey and dry.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, celery, lemon):

  1. Carrotfits better
  2. Capsicumfits better
