Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Boil the potatoes whole with skins on in plenty of salted water until just tender, then let cool.

  2. Remove the skins and slice the potatoes into ¼‑inch thick slices.

  3. Place the sliced potatoes in a bowl.

  4. Season with salt and pepper.

  5. Chop into small square pieces.

Make the milk sauce

  1. Melt the butter over medium heat.

  2. Add the milk.

  3. Bring to a boil.

  4. Add the chopped potatoes to the boiling milk.

  5. Stir to moisten.

Warm and serve

  1. Cover and reduce heat to low.

  2. Place in a 350°F (175°C) oven.

  3. Heat the potatoes through gradually.

  4. Stir gently from the bottom before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk of the dish, with starch that softens and absorbs the milk as they warm.
Butter
Adds richness and a silky mouthfeel to the milk.
Sweet milk
Supplies liquid that moistens the potatoes and forms the creamy coating.

The step that matters

Heat the potatoes through gradually. Adding cut potatoes to boiling milk and then heating in the oven can scorch the milk or leave the potatoes unevenly warmed. Gentle, covered heating lets the potatoes absorb the liquid and warm evenly without breaking apart.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, egg, milk):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against pepper, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
