What each ingredient does

Potatoes
Form the bulk of the dish, and their starch gives a soft, tender interior.
Butter or drippings
Provide fat for frying, carrying flavour and helping the potatoes crisp lightly.
Onion
Adds sweetness and savoury aroma as it softens in the fat.

The step that matters

Cook without browning the potatoes. Stirring gently and keeping the heat moderate lets the potato surfaces warm and soften without scorching. Overbrowning can turn the exterior bitter and dry out the pieces.
