What each ingredient does

Potatoes
Form the main body of the fillets, turning starchy and tender inside as they fry.
Boiling lard
Conducts heat quickly and fries the potatoes, giving them a crisp, golden exterior.

The step that matters

Boil the lard again before the second frying. Potatoes dropped into lard that has cooled lose heat and absorb more fat, so they turn greasy instead of crisp and puffed. Reheating the lard restores the high temperature needed for a crisp exterior.
