Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Curds and Cream
Ingredients
Directions
Make the curd
Pour 1 tablespoon of prepared rennet into each quart of milk.
Allow the milk to curdle, then tie the curds loosely in a thin cloth and hang to drain without wringing or pressing.
Once drained, place the curd in a mug and set it in cool water, changing the water frequently.
Serve
When ready to serve, gently ladle out any whey from the mug without pressing the curd.
Transfer the curd to a deep dish and pour fresh cream over it.
Serve with powdered loaf sugar and a nutmeg grater on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Milk
- Its proteins and fat form the curd once coagulated.
- Prepared rennet
- Its enzyme coagulates milk proteins into soft curds.
- Fresh cream
- Adds richness and a smooth, fatty mouthfeel to the curd.
- Powdered loaf sugar
- Adds sweetness, which the cook can adjust to taste.
The step that matters
Draining the curd without wringing or pressing. Pressing or wringing forces out moisture and squeezes the curd into a dense, rubbery mass. Loose draining keeps the delicate protein network soft and tender.
Swap the nutmeg
How well each one fits the dish's main ingredients (milk, sugar, cream):
- Cinnamonfits better
- Nutmegthe original
- Gingerfits less well
- Peppermintfits less well
Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
