What each ingredient does

Eggs
Set into a firm structure as they cook, holding the omelet together.
Bread crumbs
Soak up the hot milk and add body and softness to the set eggs.
Milk
Softens the bread crumbs and adds moisture to the custardy egg mixture.
Butter
Fats the pan and adds richness and browning on the surface.

The step that matters

Fry slowly. Eggs proteins set and toughen quickly over high heat, so slow cooking keeps the omelet tender and lets the centre set before the bottom over-browns.
