Why it works: Apricot and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 3,630 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Apricot Meringue Pie
Ingredients
Directions
The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the filling
Preheat the oven to 350°F (175°C).
Mix the chopped apricots with ½ cup sugar and the beaten egg yolk.
Fill the pie crust with the apricot mixture and bake for 25 minutes.
Remove from the oven and let it stand for 2-3 minutes.
Top and finish
Make the meringue by beating the egg white and adding 2 teaspoons sugar.
Spread the meringue over the pie and return it to the oven until golden brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apricots
- Provide the fruit flavour and bulk of the pie filling.
- Sugar
- Sweetens the filling and helps the meringue stay glossy and stable.
- Egg yolk
- Thickens the apricot filling as it bakes and adds richness.
- Egg white
- Whips into a foam that forms the meringue topping.
The step that matters
Spreading the meringue over the pie. The meringue should touch the crust edge so it seals and does not shrink or weep. Whipped egg white is a foam that needs sugar to hold its structure, and it browns in the oven through heat-driven browning of its sugars and proteins.
