Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Adds fat and richness, giving the dessert a smooth, creamy texture.
Powdered sugar
Adds sweetness and dissolves easily into the lemon and wine mixture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
White wine
Adds acidity and a subtle aroma to the cream.
Isinglass or gelatin
Sets the liquid as it cools, giving the cream a firm, sliceable structure.

The step that matters

Stir in the gelatin while it is lukewarm. Gelatin must be lukewarm when stirred into the cream. Hot gelatin can thin the cream and weaken its set, while cooled gelatin can form lumps or strands before it mixes evenly.

  2. Strawberryfits better
  3. Raspberryfits better
