Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard base while whites are folded in to give the sponge its airy lightness.
Gelatine
Sets the liquid mixture so it holds its shape when cooled and unmoulded.
Lemon juice
Provides the sharp acidity that defines the flavour of the sponge.
Sugar
Sweetens the lemon juice and balances its tartness.

The step that matters

Fold in the egg whites until it begins to thicken. If the mixture is too warm or too runny when the whites go in, they deflate and the sponge loses its airy texture. Cool it until just thickened before folding so the foam stays trapped.

Swap the lemon

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
