Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid mixture into a soft, sliceable cream that holds its shape in molds.
Cream
Adds richness and a light, velvety texture to the set mixture.
Sugar
Sweetens the mixture and balances the sherry and lemon acidity.
Lemon juice
Adds acidity that brightens the flavour and cuts the sweetness and richness.
Sherry
Adds aroma and depth of flavour to the mixture.

The step that matters

Beat in the cream before the mixture sets. Gelatine begins to set as it cools. If the cream is added after it has firmed, it will not blend evenly, leaving lumps and an uneven texture instead of a smooth velvet cream.

Swap the lemon
