The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and helps balance the sharpness of the citrus juice.
Oranges
Provide the main juice, flavour and liquid body of the jelly.
Lemons
Add acidity and bright citrus flavour, with zest adding aroma.

The step that matters

Dissolving the gelatine in the boiling water. Gelatine must fully dissolve in hot liquid before it can set evenly. Undissolved granules leave weak or grainy spots in the finished jelly, so stir constantly until no grains remain.
