Warmed-over Meat

Ingredients

Directions

  1. Make a gravy using bones and trimmings with a small onion or slice of salt pork.

  2. When browned, add a little hot water and season with coarse sea salt, then strain.

  3. Return the gravy to the pan and thicken it with flour.

  4. Cut the meat across the grain into small pieces and stew thoroughly without boiling.

  5. Sprinkle with pepper and additional salt to taste.
