Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Meat Escaloped

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and peel the potatoes, then cut them into quarters and place in cold water.

  2. Boil the potatoes until tender.

  3. Trim and chop the fresh meat very finely.

  4. Dredge the chopped meat in flour and season with salt and pepper.

Assemble

  1. Add butter and hot water to the meat until it is sufficiently moist.

  2. Transfer the meat mixture to a baking dish.

  3. Mash the boiled potatoes and season them to taste.

  4. Spread the mashed potatoes smoothly over the meat.

  5. Dot the top with additional butter.

  6. Cut across the top of the potatoes to prevent a crust from forming.

Bake

  1. Bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh meat
Forms the savory base of the dish, providing protein and rich flavor.
Potatoes
Form a soft mashed topping that bakes to a golden, browned crust.
Flour
Dredging the meat lightly thickens the juices as the dish bakes.
Butter
Adds fat and richness, keeping the meat moist and the top tender.
Hot water
Adds moisture so the chopped meat stays juicy while baking.

The step that matters

Cut across the top of the potatoes. Cutting the mashed potato surface lets steam escape while baking, which keeps the topping from forming a thick, tough crust and helps it brown evenly.

Swap the potato

How well each one fits the dish's main ingredients (meat, flour, pepper, butter):

  1. Shallotfits about as well
  2. Potatothe original
  3. Capsicumfits about as well
  4. Leekfits about as well

Fit is the average pairing score against meat, flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
